Qabli Pulao is the national dish of Afghanistan. Long-grain basmati is steamed with lamb stock so every grain carries flavour. A whole lamb shank sits on top — slow-cooked until the meat slides off the bone. Sweet caramelized carrots, plump raisins, and toasted slivered almonds finish the plate.

What is Qabli Pulao?

Qabli Pulao (also written Kabuli Pulao) is the national dish of Afghanistan. Long-grain basmati is steamed in lamb stock, then layered with slow-cooked lamb, caramelized carrots, golden raisins, and toasted slivered almonds. It is closer in technique to a pulao than to biryani — the rice is cooked together with the stock rather than layered after par-boiling.

How is it different from biryani?

Biryani is layered: par-boiled rice cooked separately, then sealed with marinated meat and finished on dum. Qabli Pulao is unlayered: rice absorbs lamb stock from the start, so flavour comes from the cooking liquid rather than from a marinade. Biryani is heavily spiced; Qabli Pulao is gently spiced — the dish leans on the natural sweetness of carrots and raisins instead.

Why a whole lamb shank?

A bone-in lamb shank is the traditional cut for this dish. Slow cooking over hours breaks down the connective tissue, the marrow releases into the stock that flavours the rice, and the meat ends up tender enough to pull apart with a fork. A boneless cut cannot replicate the texture or the depth.

Mild. Qabli Pulao is traditionally a gently spiced dish — the carrots and raisins balance the lamb, and the spice profile leans on cumin, cardamom, and clove rather than chili. Good for diners who find biryani or karahi too aggressive.
